I love all things lemon! You might enjoy this.

Cook 1/2 cup of white rice in 1 cup of water. To this, add zest of one lemon, 4 TB of sugar. Add the juice of two lemons after zesting and a pinch of salt. Cover with lid and cook about 20 minutes. Drain water if there is any remaining. Enjoy hot.

OR turn into a lightly buttered pudding ring and chill. Turn out onto a glass platter and add whipped cream in the center and 1 TB of additional lemon zest.
